The Chinese New Year of the Wooden Horse brought the revelation today of the best almond cookie in Toronto.
Master chef Alvin Leung, one of the judges on the new Canadian TV show, Master Chef Canada, selected Epi Breads almond cookie, as number one!
“They’re like me and what I do, Alvin Leung told the Toronto Star newspaper, explaining his identification with the cookie. “They’re an adaptation of something original. Like me, I try to adapt and then I have to refine my adaptation. I want an evolution, and then a refinement.”
Alvin Leung, the self-described “Demon Chef” grew up in Toronto, and now runs two internationally renown restaurants featuring his “X-Treme Chinese” food; Bo London, in London, England and Bo Innovation in Hong Kong.
Epi Breads is the bakery-cafe, run by Leung’s friend Stan Sue. He, and head baker Paul Chan, are also Chinese-Canadians. Almond cookies are one of the many treats that are part of the annual Chinese new year festivities.
